Available in most local bakeries in Kerala, a Jam Roll is essentially a rolled up sponge cake with a generous spread of jam. These rolls sure remind me of home!
Ingredients
120 gram flour
120 gram sugar
3 eggs
¼ + 1/8 teaspoon baking powder
3 ml vanilla essence
15 ml water
1/4 cup icing sugar
1/4 cup jam
How To
Preheat the oven to 190-200 degree celsius. Oil and line a baking sheet. Sieve flour, baking powder and other dry ingredients into a bowl. In a seperate bowl, whisk together the eggs and sugar till the mixture is thick and pale. Add the essence and combine well. Fold in the flour. Add water and mix well and pour into the baking sheet. Bake till the sponge springs back for about 15 mins.
Cut out a baking/butter paper in the same size as your baking sheet. Place this sheet on your work surface and dust with icing sugar. Turn the cake out on to this sheet and trim the crisp edges. Now roll the cake slowly from one of the short sides along with the paper. Unroll and spread the jam evenly on the top. Now roll the cake again from the same side without the paper. Dust with icing sugar and cut into equal desired lengths.

For 120gm, you can use 1/2 cup plus 2 tablespoons.

Tried the jam roll recipe today. It came out little dry. It cracked. I was wondering when I should roll the cake? When it’s hot or after the cake is completely cooled.
Should I add some sort of simple syrup?
Hi Swetha, I usually turn out the sponge on to the butter paper right after it is baked….I am sure it will come out right the next time 🙂
