I stumbled on this yeasted fruit cake while trawling the net for a yeast cake recipe. I have no clue as to which site I got it from since I had written down the recipe on a piece of paper. Anyways, this one came out tops and tasted lovely. A must try for those who love fruit cakes!
Ingredients
180 gram + 1 tablespoon flour
125 gram granulated sugar
125 gram butter
2 eggs
150 gram dried mixed fruits
1 teaspoon yeast
30 gram butter
How To Make Yeasted Fruit Cake
Preheat the oven to 210°C. Grease and line a muffin tray. Coat the mixed dry fruits with 1 tablespoon of flour and keep aside.
Mix the flour and yeast in a bowl. In another bowl, beat butter and sugar until light and fluffy. Add the eggs one at a time and mix well. Now add half of the flour and yeast mixture and combine well. Lastly, add the remaining half of the flour yeast mixture and the dry fruits and combine well. Fill the muffin moulds two-thirds with the batter and bake for 30-35 minutes or until the cakes start browning on the sides. Allow the yeasted fruit cakes to cool before serving.
