Making cheera thoran always makes me nostalgic…I didnt like leafy vegetables much as a kid and my mom had a hard time trying to make me eat this. Now every time I make this dish and try to get my brats to eat this, I am totally in awe of my mom!!
Ingredients
2 bunches of spinach leaves (about 5 cups, cleaned and chopped finely)
3/4 – 1 cup grated coconut
4-5 shallots (thinly sliced)
2-3 green chillies
1/4 teaspoon mustard seeds
1/4 teaspoon turmeric powder
1/2 teaspoon cumin seeds
A stalk of curry leaves
Salt to taste
1 tablespoon coconut oil
How To Make Cheera Thoran
Drain the chopped spinach leaves and mix well with coconut, curry leaves, cumin seeds, green chillies, turmeric powder and salt. Keep aside.
Heat the oil in a pan and splutter mustard seeds. Add shallots and saute till translucent. Add the spinach mixture and fry on low flame for 5-8 minutes. Since the spinach will have some water in it even after draining, there is no need to sprinkle water for this particular “thoran”. The cheera thoran is ready as soon as the water has evaporated. Serve hot with rice.
