Here goes another simple dish from my kitchen. The traditional prawn roast we are used to asks for marination and frying onions separately. Truth be told, on weekdays my patience would have worn thin by the time it is time to cook dinner. And I resort to quick fixes like these. And luckily for me, these dishes work!
Ingredients
500 gm prawns, cleaned and deveined
1 big red onion, sliced thinly
couple of garlic pods, chopped
a small piece of ginger, chopped
1/2 teaspoon turmeric powder
A tablespoon of Kashmiri chilli powder
1 stalk of curry leaves
Salt to taste
2 tablespoon oil
How To
Heat oil in a thick bottomed pan. Saute onions till lightly browned on medium flame. Add chopped ginger, garlic, curry leaves and saute for 2-3 minutes. Add in spice powders and salt and again saute for a couple of minutes. Lastly add in the prawns and saute on low flame till well cooked and browned. Serve hot with rice and enjoy!
Notes: Using shallots instead of red onion will increase the flavour profile of this Kerala style prawn roast, unfortunately, sourcing shallots is a big challenge in the place I live and hence I have to make do with the regular onion. Also, please feel free to adjust the amount of chilli powder to your taste, I do add a bit more than mentioned to get that extra spicy hit!
