So it was the premiere of MasterChef Australia Back To Win and I had to make a nice little dinner to go along with it! And it helped that I had some bread dough proofing. After rummaging around the pantry for some time, I stumbled on a curried sausages mix from Continental. Though these are often paired with steamed rice, I decided to take a chance with some pesto rolls and mashed potatoes. And luckily, these turned out great and we didnt have much leftovers!
Ingredients
1 brown onion, sliced thinly
2 garlic cloves, crushed
2 carrots, peeled and diced
1 cup frozen peas
1 teaspoon of parsley
8 sausages (I used honey glazed chicken sausages)
1 tablespoon of olive oil
1 1/4 cup water
2 tablespoon tomato sauce
1 pack of curried sausages mix
How To
Heat the oil in a large pan and cook the sausages until brown, turning for 4-5 minutes. Transfer to a plate. Keep aside.
In the same pan, add the onions and crushed garlic and saute until softened. Add carrots and saute on low flame for 4-5 minutes.
Meanwhile, follow the instructions on the pack and prepare the sauce by combining the water, tomato sauce and the mix. Add this to the pan along with the sausages(I sliced them up into small pieces to make it easier for the children) and frozen peas. Simmer on low flame for 15-20 minutes until done. Garnish these curried sausages with parsley and serve with mashed potatoes and steamed rice or like I did with pesto rolls. Either way, it tastes yum!
Oh, and I had a handful of sad looking beans and I added them in too!
