This Sausage Fusilli recipe from Jamie caught my fancy simply because of its name “Proper Bloke’s Sausage Fusilli”. I was intrigued and wanted to find out how easy it would be to cook and how it would taste. And while I was cooking this, it was easy to understand how this dish must have got its name….its so easy to prepare this one and the flavours and the taste are to die for!
Ingredients
500 gm fusilli
500 gm sausage (cut into thin slices)
2 teaspoon fennel seeds (crushed)
2 dried red chillies (crushed)
1 tablespoon dried oregano
white wine (1 wineglass full)
juice and zest of 1 lemon
Salt to taste
Pepper to taste (freshly ground)
4 tablespoon butter
100 gm grated parmesan cheese
A bunch of fresh parsley leaves (chopped)
3-4 tablespoon olive oil
How To
Heat the olive oil in a heavy-bottomed frying pan. Add the sausages and fry for a couple of minutes until the meat starts to color. Add the fennel seeds and chillies and cook on medium heat for 10 minutes until the meat becomes crisp and golden brown . Add the oregano, white wine and cook on low flame till the wine reduces by half. Meanwhile cook your pasta al dente along with the required amount of salt . Drain the cooked pasta after reserving some of the water it was cooked in.
Add lemon zest and juice along with the pasta to the sausage cooking in the pan. Once the pasta is coated with the flavors, add the butter, grated Parmesan, chopped parsley and a few spoons of the reserved cooking water. Taste and check for seasoning. Serve immediately with some grated Parmesan on top.
