I was going through the recipes and just realized I hadnt posted a quick and easy recipe of a chicken curry till date. How silly of me! The below recipe is super quick and easy to prepare on a weekday.
Ingredients
500 gm chicken (cut and cleaned into medium sized pieces)
2-3 onions (medium sized, sliced thinly)
1 large tomato (sliced thinly)
2 green chillies (slit)
2 teaspoon ginger garlic paste
1 teaspoon red chilly powder
2 teaspoon coriander powder
2 teaspoon chicken masala (I used Eastern brand)
1/4 teaspoon mustard seeds
2 stalks of curry leaves
Salt to taste
3-4 tablespoon coconut oil
How To
Heat the coconut oil in a pan and splutter mustard seeds. Add onions, ginger garlic paste, green chillies and curry leaves and saute till onions become transculent. Add the sliced tomato and saute for 3-4 minutes. Now add all the spice powders along with salt and saute for a couple of minutes. Lastly add the chicken pieces and fry on low flame for about 5 minutes till the chicken is well coated with the masala. Add enough water (about 1 cup) and cook till done and the gravy thickens. Serve hot with rice or rotis.
