This fruit loaf is quite easy to make and can be eaten plain since it is loaded with dried fruits and cherries!
Ingredients
180 gram soft brown sugar
250 ml milk
250 gram butter
250 gram mixed dried fruits
60 gram cherries (chopped)
1 egg (beaten)
340 gram plain flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon mixed spice
How To Make This Fruit Loaf
Place sugar, milk, butter, dried fruits and cherries in a saucepan. Bring to boil and simmer for 2-3 minutes. Add the beaten egg once this mixture has cooled down. Sift in the dry ingredients and combine well. Pour this into a greased 9 inch loaf tin. Bake in a preheated oven at 160 degree celsius for 60 to 90 minutes until risen. Leave this fruit loaf in the tin for 5 minutes before turning on to a wire rack to cool.
