This potato curry is very easy to make and tastes simply great with appam or idiyappam…
Ingredients
1 onion (medium sized, cubed)
2 potatoes (medium sized, cubed)
2 green chillies
1 tablespoon ginger (finely chopped)
1 tablespoon garlic (finely chopped)
1/4 teaspoon turmeric powder
1/2 teaspoon red chilli powder
1/2 teaspoon pepper powder
1/2 teaspoon mustard seeds
A stalk of curry leaves
1 cup water
1 cup coconut milk
Salt to taste
2-3 tablespoon oil
How To Make Potato Curry
Heat oil in a deep bottomed pan and splutter mustard seeds. Add onions and saute till translucent. Add ginger, garlic, curry leaves and green chillies (slit lenghtwise) and saute for 3-4 minutes. Add all the powders (turmeric, red chilly, pepper) and fry for a couple of minutes. Now add potatoes, water and salt and cook till potatoes are done and the gravy becomes thick. Lastly add coconut milk and boil for another 5 minutes on low flame. This amazing potato curry can be served with appam or idiyappam.
