This easy chicken biryani can be made within no time at all!!!
Ingredients
2 cups basmati rice
½ kg chicken (medium sized pieces )
½ teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon red chilli powder
4 onions (thinly sliced)
¼ cup ginger garlic paste
1 stalk of curry leaves
2 tomatoes (sliced)
Salt to taste
¼ cup curd
3 cardamom pods
3 cloves
1 small piece of cinnamon
1 bay leaf
1 tablespoon lemon juice
1 1/4 cups water
3 tablespoon Oil
50 gram ghee
How To
Wash and soak the rice in water for 15 minutes. Heat oil in a pan. Add onions and sauté till they turn golden brown in colour. Add ginger garlic paste and curry leaves and sauté again for a couple of minutes. Add tomato and fry for 3-4 minutes. Next add coriander, turmeric and red chilly powder and saute for a couple of minutes. Lastly, add chicken pieces, salt and curd and cook on medium flame till the chicken is done and the gravy is thick.
Drain the rice. In another thick bottomed pan, pour ghee and keep the burner on medium. Now add cardamom, cloves, cinnamon and bay leaf and sauté for a minute. Add the rice and fry until it starts crackling. Add salt, lemon juice, water and the cooked chicken along with its gravy. Cook till the rice is done. There should not be any trace of water left. Garnish the biriyani with fried cashew, raisins and onions. Serve hot with pickle and raita.

Notes: The amount of water required for cooking the rice depends on the type of Basmati rice being used.
