This potato cauliflower stir fry is a real quick side dish for rotis.
Ingredients
1 small cauliflower (about 250 grams)
1 potato (medium sized, diced)
1 onion (diced)
A small piece of ginger
2 cloves of garlic
1 tablespoon coriander leaves (chopped)
1/4 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon red chilli powder
1/2 teaspoon fennel seeds
1/2 teaspoon mustard seeds
3 tablespoon oil
Salt to taste
How To Make Potato Cauliflower Stir Fry
Clean and cut the cauliflower florets and keep aside.
Heat the oil in a thick bottomed skillet. Splutter the mustard seeds followed by fennel seeds. Add the onions and saute until transparent. Add ginger, garlic and salt and saute for a minute. Add the cauliflower florets and saute on low flame until cooked. Now add the potatoes and saute on low flame till cooked. Add 1-2 tablespoons of water if required. Lastly, add turmeric powder, chilli powder and coriander powder and saute for a couple of minutes. Once the water has dried up, remove from fire and garnish with chopped coriander leaves.
