These rock drops or cookies are very easy to make as you just have to drop spoonfuls of the dough on to the baking sheet!!!
Ingredients
1/3 cup butter
1 ½ cups all-purpose flour
2 teaspoon baking powder
1/3 cup brown sugar
½ cup golden raisins
2 tablespoon cherries (finely chopped)
1 egg
2 tablespoon milk
How To
Preheat oven to 200 degree celsius. Grease a baking sheet with butter. Sift the flour and baking powder into a bowl. Rub in the butter with your fingertips so that mixture looks like bread crumbs. Now add brown sugar, raisins and cherries. Beat the egg and add it to the mixture. Lastly, add milk and knead a soft dough from the mixture. Scoop spoonfuls of this dough onto the baking sheet, spacing them 2 inches apart. This helps the mixture to expand during baking. Bake in the oven for 15-20 minutes or until firm to touch. Transfer the rock drops from the baking sheet to a wire rack and allow to cool before serving.

Notes: These rock drops can be stored in an airtight container at room temperature for up to a week. About 10-15 rock drops can be prepared with this dough.
