Ingredients
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk
2 large eggs
2 tablespoon red food coloring
1 teaspoon white vinegar
1 teaspoon vanilla extract
 
For Whipped Cream Frosting
1 cup heavy whipping cream
1 teaspoon vanilla extract
1 tablespoon icing sugar
 
How To
Preheat the oven to 180 degree Celsius. Line two 12-cup muffin pans with cupcake liners.
 
Sift together the flour, sugar, baking soda, salt and cocoa powder. Beat together the oil, buttermilk, eggs, food coloring, vinegar and vanilla in a large bowl. Add the dry ingredients to this mix and beat until smooth and thoroughly combined.
 
Pour the batter into the cupcake tins (about 2/3rd portion of a cupcake liner should be covered with the mix). Bake in the oven for about 25 minutes or until a toothpick inserted in the middle of a cupcake comes out clean. Remove the pans from the oven and cool completely before icing.
 
Whipped Cream Frosting
Place the whipping cream, vanilla extract and sugar in a large mixing bowl and combine well. Beat the mixture until stiff peaks form. Use as required.

Notes: The original Red Velvet Cupcake recipe used cream cheese frosting. But I have used whipped cream frosting for this one!!
