Poori masala is a hot favourite at home. I make this dish even for dinner as my kids love to eat poori’s.
For the Poori
2 cups wheat flour
1 cup water
Salt to taste
Oil for frying
How To
Mix salt and wheat flour. Add water gradually to this mix and combine to make a thick dough. Divide the dough into small balls and roll out with a pin. Deep fry in hot oil until both sides have turned golden brown.
Now for the Masala
3 potatoes (boiled, peeled & mashed)
1 small onion (chopped finely)
2 green chillies (chopped)
½ teaspoon ginger (grated)
¼ teaspoon turmeric powder
½ teaspoon mustard seeds
1 stalk of curry leaves
Salt to taste
2 teaspoon oil
How To
Heat oil in a pan and splutter mustard seeds. Add onion, ginger, green chillies and curry leaves and sauté till onion becomes translucent. Add the turmeric powder and salt and sauté for a minute. Next add the mashed potatoes and mix well. Serve hot with pooris.
Notes: For the pooris to puff out while frying, ensure that the thickness is even while rolling out the dough.
