My kids call Idiyappam “rice noodles” and love it when I top it with some grated coconut and sugar…..
Ingredients
1 ½ cup roasted rice flour
¾ cup water
1 teaspoon oil
Salt to taste
½ cup grated coconut
How To
Boil water with salt and oil. Remove from fire. Pour the boiling water gradually into the rice flour, stirring with a spoon continuously so that no lumps are formed. Once cooled, knead to form a soft dough. Divide the dough into small portions and put each portion through a semolina press and squeeze the dough onto idli plates with a circular motion. Put some grated coconut on top of each idiyappam and steam idli plates for 10 minutes. Serve idiyappams with vegetable or any meat stew.
