Coconut Chutney is a perfect accompaniment for idli and dosa.
Ingredients
1 cup grated coconut
3 button onions (thinly sliced)
2 dry red chillies (slit)
½ teaspoon ginger (chopped)
½ teaspoon mustard seeds
4 or 5 curry leaves
Salt to taste
1 teaspoon oil
How To
Put the grated coconut, ginger and salt in a blender with a little water and grind to make a fine paste. Keep aside. Heat oil in a pan and splutter mustard seeds. Add onion, red chillies and curry leaves and sauté till onion turns golden brown. Add the ground paste, mix well and add a small amount of water to adjust to the consistency you are used to. Remove from fire as soon as the chutney starts to boil. Serve with idly or dosa.
Notes: You can add a couple of red chillies while grinding the coconut if you need a spicy coconut chutney.
