I prefer making Chicken Fried Rice for parties as it is easier to prepare than chicken biriyani. Also, one can never go wrong with such a simple recipe:)
Ingredients
2 cups rice
4 cups water
¼ cup carrot (julienned)
¼ cup cabbage (sliced finely)
½ cup chicken (cooked & shredded)
1 egg (scrambled)
1 tablespoon soya sauce
Salt to taste
1 teaspoon lemon juice
4 tablespoon oil
How To
Soak rice in water for 30 minutes. Drain the water completely. Boil water & keep aside. Heat 2 tablespoons of oil in a pan. Add rice and fry till the rice starts cracking. Add boiled water, lemon juice & salt. Remove from fire after water dries up & rice is cooked. Heat remaining oil in a wok & add vegetables. Stir fry the vegetables at high heat for 3-4 minutes. Add chicken, scrambled egg and soya sauce & combine well. Stir for 5 minutes. Add rice & mix thoroughly and remove from fire. Chicken fried rice is ready to be served.
