An extremely humble stir fry when you think of it by itself, but when you pair it with red rice, moru kachiyathu and fish fry, your regular average Kerala meal just goes up a notch higher!
Ingredients
2 cups cabbage, shredded or finely chopped
½ cup grated coconut
2-3 button onions (sliced)
2-3 green chillies (chopped finely)
¼ teaspoon garlic clove(chopped)
¼ teaspoon turmeric powder
¼ teaspoon cumin seeds
¼ teaspoon mustard seeds
Salt to taste
A few curry leaves
2 teaspoon coconut oil
How To Prepare
Heat the oil in a pan and splutter mustard seeds. Add button onions, green chilli and curry leaves and sauté for a couple of minutes.
Meanwhile, mix shredded cabbage, grated coconut, garlic, turmeric powder, cumin seeds and salt thoroughly in a bowl using your hands. Add this mixture to the pan and stir for 2-3 minutes. Sprinkle 1-2 tablespoon of water and cover and cook on low flame for 5-10 minutes or until cabbage is cooked and dry.
Serve this cabbage thoran aka cabbage stir fry with red rice and moru kachiyathu and you wont go wrong!
Notes: A variation to this would be adding shredded carrot.
