Butter cookies, soft and buttery cookies that just does not allow you to stop at one!
Ingredients
¾ cup butter
¾ cup caster sugar
1 egg
2 cups self-raising flour
Finely grated rind of 1 lemon
How To
Preheat oven to 180 degree celsius and place oven rack in the centre of the oven. Line a baking sheet with parchment paper. Whisk the butter and sugar in a bowl until light and fluffy. Whisk in the egg. Now fold in the flour and lemon rind gradually to form a dough. Put the dough on to a lightly floured surface and knead until smooth. Roll out the dough and then cut out shapes using cookie cutters. Place these on the baking sheet, spacing about 2 inches apart. Bake cookies for 15-20 minutes or until lightly browned. Remove from oven and place on a wire rack to cool.

Notes: These butter cookies can be stored in an airtight tin for 3-4 days.
