Vegetable Stew, or vegetables in a creamy coconut milk gravy, is the vegetarian accompaniment for appam.
Ingredients
1 onion (sliced finely)
1 potato (cubed)
1 carrot (cubed)
2 green chillies (slit)
1 teaspoon ginger (chopped finely)
1 cup thin coconut milk
¾ cup thick coconut milk
1 stalk of curry leaves
¼ teaspoon mustard seeds
1 button onion (finely sliced)
Salt to taste
4 teaspoon coconut oil
How To
Heat three teaspoon of oil in a deep bottomed pan. Splutter cinnamon, cloves and cardamom. Add onion, ginger and green chillies and sauté till the onion becomes translucent. Add the cubed vegetables, thin coconut milk and salt. Bring to boil, then reduce heat and simmer till vegetables are cooked. Next, add the thick coconut milk and cook for 5 minutes & remove from fire. In another small pan, heat 1 teaspoon of oil and splutter mustard seeds. Add button onion and curry leaves and sauté till golden brown. Garnish the stew with this tempered mustard seeds, button onion and curry leaves. Serve this vegetable stew with appam.
