It was my husband’s birthday a couple of days back and I wanted to send something special for lunch to office. This Pineapple Fried Rice recipe from Sanjeev Kapoor looked quite easy to do in the morning rush for school and office. Not only was it easy to make, it tasted great too!
Ingredients
2.5 cups Basmati Rice (cooked as per instructions on the cover)
1 cup chopped pineapple
1 large onion (thinly sliced)
2 eggs
1/4 cup green peas
a handful of cashew nuts
1 teaspoon brown sugar
1/2 teaspoon soya sauce
1 teaspoon fish sauce
1 teaspoon red chilli powder
Salt to taste
3 tablespoon oil
How To
Heat 1 tablespoon oil in a non stick wok. Break 2 eggs into the wok and cook while stirring continuously. Once cooked through, transfer the scrambled eggs into a bowl. Keep aside.
Heat 1 tablespoon oil in the same wok, add cashewnuts and saute till light golden. Transfer these into another bowl and keep aside.
Heat 1 tablespoon oil in the same wok, add onion and saute till they turn transluscent. Add green peas, salt, soy sauce, fish sauce, red chilli powder and brown sugar and mix well. Now add the pineapple and combine well and cook for 2 minutes. Lastly, add the rice, scrambled eggs, cashewnuts and mix well. Serve hot with cucumber raita and some pickle.
