A traditional Goan dish, Chicken Vindaloo is very popular around the world.
Ingredients
750 gram chicken (cut into small pieces)
1 cup diced onions
5 whole red chilies
5-7 cloves of garlic
1 inch ginger
¼ cup white wine vinegar
4 tablespoon olive oil
Salt to taste
For the dry spice mix
1 teaspoon cloves
3-4 whole cardamoms
1 teaspoon cinammon powder
1/2 tablespoon peppercorns
1 tablespoon cumin
1 teaspoon turmeric powder
1 1/2 teaspoons mustard seeds
How To
Soak the red chilies, garlic cloves and ginger in white wine vinegar for half an hour. Grind together to make a paste. Marinate the chicken pieces in this paste and keep in the refrigerator for one hour.
Grind together the cloves, cumin, cardamom, cinnamon, turmeric and peppercorn. Set aside.
Heat oil in a thick bottomed pan. Splutter mustard seeds. Add onions and saute till they turn light golden brown. Add the marinated chicken with all the juices and stir fry for a couple of minutes. Add the dry spices along with salt. Combine everything together and cover the pan with a lid. Let it simmer and cook until the chicken is done and curry is thick. Keep stirring in between. Serve hot with rice or rotis.
