A traditional yet popular South Indian snack, Uzhunnu Vada is also eaten along with Idli and Coconut Chutney for breakfast.
Ingredients
1 cup urad dal/black gram
½ teaspoon pepper (crushed)
A few curry leaves (chopped)
1/2 cup coriander leaves (chopped)
¼ teaspoon baking soda (optional)
Salt to taste
Oil for deep frying
How To
Clean and soak the urad dal in water for 3-4 hours. Drain the urad dal and grind it to a smooth paste without adding water. Mix this paste thoroughly with pepper, curry leaves, coriander leaves and baking soda. Heat the oil in a deep bottomed pan. Keep a bowl of cold water ready. Wet your hands with this water. Take a small portion of the batter and shape it into a ring with a small hole in the centre. Slip the vada into the hot oil and fry till golden. Repeat the process till the batter is over. Drain the vadas on paper towels. Serve with coconut chutney.
Coconut Chutney for Uzhunnu Vada
Ingredients
1 cup cocounut (grated)
2 tablespoon curd
1 green chilli (chopped)
Salt to taste
How To
Mix and grind all the ingredients together. Garnish with curry leaves and serve hot with uzhunnu vada.
