Ethakka Appam or Pazham Pori is a quintessential Kerala snack available in almost every nook and corner of Kerala, right from restaurants to roadside eateries.
Ingredients
4 ripe plantains
3/4th cup flour/maida
1/4th cup rice flour
2 teaspoon sugar
¼ – ½ cup water
Oil
How To
Peel each banana and cut into 3 pieces, lengthwise. Mix flour, sugar and rice flour together. Make a thick batter using this mix and water.
Heat the oil. Dip the banana slices in the batter and deep fry until golden brown. Drain the excess oil using tissue paper. Serve these hot ethakka appams with tea.

Notes: I usually cut the plantains in half and then slit them lengthwise as it is easier to hold and eat. Also, this recipe uses a generous 2 teaspoons of sugar as against my mom’s 1 teaspoon. This additional amount of sugar helps to caramelise the edges of the plantains beautifully.

Nagarajan, the normal Nenthrakkayu tht you get in veggie shops is the best one for this!
