This carrot cake recipe here is another lip smacking cake from Rachel Allen’s TV show.
Ingredients
2 eggs
140ml vegetable oil
200g soft light brown sugar
300g grated carrot (weight when grated)
100g raisins
75g walnuts (chopped)
180g self-raising flour
Pinch of salt
½ teaspoon baking soda
1 teaspoon cinnamon (ground)
½ teaspoon nutmeg (grated)
½ teaspoon mixed spice
How To
Preheat the oven to 300°F/150°C. Oil and line a 9 inchcake tin with greaseproof paper.Beat the eggs in a mixing bowl.Add oil, brown sugar, grated carrot, raisins and chopped nuts to this bowl. Sift in the dry ingredients and mix using a wooden spoon.Pour the mixture into the cake tin and bake for 80 – 90 minutes or until a skewer inserted into the centre comes out clean. Allow to cool in the tin for 5 minutes before removing. Cool on a wire rack before serving. You can either serve this carrot cake plain or with a dollop of cream cheese frosting or vanilla bean infused buttercream.
Substitution:For 1 cup self-raising flour, mix 1 cup all-purpose flour with 1 1/2 tsp baking powder and 1/4 tsp salt.
